Lateral Cooking: Niki Segnit talks us through flavour matching with tasting plates
Niki Segnit is the author of The Flavour Thesaurus, which has sold over 250,000 copies in hardback to date, her inspiring new book, Lateral Cooking, grew out of experiments with flavour combinations that went into her bestselling debut. Tasting hundreds of flavour pairings required Segnit to strip recipes down to their basic formulae, and she soon realised she was learning to cook by a combination of memory and instinct, just like her grandmother. The result is Lateral Cooking, the companion to The Flavour Thesaurus, which focuses on method where its predecessor focussed on flavour.
This will be a fascinating hour with Niki who will lead us through her world of flavours and how we can all be creative cooks in our own kitchens. How one recipe can lead to another recipe and then another. This is a must for anyone who loves cooking or simply enjoys food.
Niki Segnit will be giving a talk and tasting on Saturday the 15th of September, at 2.45pm in the Marquee. Tickets are £10 which includes a tasting plate and a glass of sparkling wine.
